Coconut Basil chicken

This recipe is for those of you who enjoy ethnic foods. J

4 chicken breasts, cut in chunks

1 medium onion, chopped

1 garlic clove, minced

2 red chilies, finely chopped

1 cup fresh basil leaves chopped (I always use more!)

2 T fish sauce

1 T fresh cilantro, chopped

1 ½ tsp. brown sugar

8 ½ oz coconut cream

Lime and additional fresh cilantro for garnish

Stir fry the onions, garlic and chilies for a couple of minutes in a little
oil.

Then add the chicken and cook till the chicken is cooked through….probably
about 5 minutes is all.

Now add the T. fresh cilantro, basil leaves, fish sauce and brown sugar….fry
for one minute to mix flavors.

Then add the coconut cream and stir for about 5 minutes.

Serve over cooked Basmati rice. Garnish with lime wedges and fresh chopped
cilantro (and more basil!).
