Soldier's Fudge

Soldier's Fudge

1 12 oz. bag semisweet chocolate chips
1 14 oz. can sweetened condensed milk
1 1 oz. square unsweetened baking chocolate
1 tsp. vanilla

Melt the 1st three ingredients over low heat and mix together. Remove from
heat. Stir in vanilla. Spread in a buttered 8"x8" baking pan, and chill
till firm. Once it's firm it does not need to be refrigerated.

The name of the recipe comes from its origin during WWII sugar rationing.
It was a favorite to send in care packages to the soldiers.

Bev's Carrot Cookies

Bev's Carrot Cookies
1 cup cooked mashed carrots
3/4 cup shortening
1 egg
2 cups flour
3/4 teasp salt
1 teasp baking powder
1 teasp vanilla
3/4 cup sugar

Preheat oven to 375*F
Mix ingredients together, place walnut
size mixture on cookie sheet,
bake for almost 8-10 minutes until light brown on
cookie bottom. Don't over cook. Cool then frost.

Frosting
3 TBLE frozen orange juice (undiluted)
2 cups powdered sugar
1/4 cup room temperature real butter
Grated rind of orange to taste (the zest)

Note: I double the cookie batter to use up all the frosting.
Husbands really like these. Can be frozen.

Recipe? Here's a favorite. Great for stuffing into mushroom caps. Any leftovers go good on a sturdy cracker like a Triscuit.

8 ounces cream cheese, softened
8 ounces (1/2 pacakge) Jimmy Dean HOT sausage

Beat the cream cheese until smooth.
Cook, drain, cool, and crumble the sausage into the cream cheese. Beat until well mixed.

I've loved this simple combination for over twenty years.

Potato Casserole

Potato Casserole---this is one of those recipes that doesn't require careful following--my kind!

1/2 to 3/4 of a 1 lb package of frozen Southern Style Hash Browns
16oz. package of cottage cheese--non fat works just fine-or use full fat
8 oz. sour cream--lo fat is fine--or full fat
1/2 C grated Parmesan cheese--more or less. Or use a different cheese. Whatever you think your family will like.
1/2C broth ( I used turkey broth that I froze in the ice cube trays.)
Mix together and place in oven proof casserole dish. Cover and bake at 350 for 1 and 1/2 hrs to 2 hrs. Serve with extra grated cheeses. Makes four huge servings, or 6 reasonable ones.

Mystery Clue #2

#2--Squares

A simple step--Cut 75 squares of a variety of fabrics of color #1--or scrappy darks.
(When I count, I get fewer, but they don't add up, so I'm having you make a few extras.)

Bed size--4 1/2 inches
Lap size--3 1/2 inches
Baby quilt-- 2 1/2 inches.

If you are a night-owl, you can find your next clue at a minute after midnight. If you are a sleepy head, save it for the morning.

Baked Spinach Artichoke Dip

1/2 butter, melted in pot
several cloves of garlic sliced, sautee in the butter
1/2 cup flour, mix in to make a roux.
Pour in a can of evaporated milk, and 1 cup of regular milk.
Heat until its thickening up.
Add a cup of chopped frozen spinach
add a cup of thawed chopped artichoke
Heat it all back up again
Add in 1 tub of parmesan shredded cheese
add in 1 tub asiago shredded cheese.
Leave out a handful from both to lay on top to create crust.

Pour hot goo into buttered baking dish I used a square glass pan.
Lay the last bit of shredded cheeses on top
Place in oven about 400 degrees and bake about 30 minutes or until entire top is golden brown and bubbly.
Let it cool a bit and dig in with your chips!

Aunt Charlene's Cheesies

Aunt Charlene's Cheesies

1/4 cup margarine, softened (do not use butter)
1/2 cup flour
1/8 teaspoon salt
1/4 pound Sharp Cheddar Cheese grated

Mix cheese with margarine.
Add remaining ingredients.
Chill.
Roll into small balls with a teaspoon.
Bake at 450 degrees for 8 to 10 minutes.
Yummy!

Smokey Fish Chowder



Smokey Fish Chowder (Real Simple Magazine)
Hands on time: 20 minutes
Total time: 30 minutes
Serves 8

8 oz Spanish Chorizo thinly sliced ( like the crumbly kind)
4 leeks (white & light green parts) cut into half moons
1 1/2 pounds Yukon Gold Potatoes (about 4 medium), cut into 1/2" pieces
1 28 oz can diced tomatoes
Kosher salt &a black pepper
2 pounds firm white fish (such as halibut or cod), cut into 2-inch pieces
1/2 cup chopped fresh flat leaf parsley

-> In a large pot, brown the chorizo over med-high heat. 1-2 minutes. Add the leeks and cook, stirring occasionally, until beginning to soften, 3-4 minutes.

-> Add the potatoes, tomatoes (with their juice), 3 cups water, 3/4 teaspoon salt and 1/4 teaspoon pepper, cover and bring to a boil. Reduce heat and simmer until the potatoes are just tender, 10-12 minutes.

-> Add the fish and simmer gently until opaque throughout, 5-6 minutes. Stir in the parsley before serving.

Mystery Clue #1


#1 Half Square Triangle Units   





Use your favorite method to make 16 squares of half square triangles using Color #1 and Color #2 in a variety of fabrics--or scrappy dark and scrappy medium.

The size of these squares depends upon the size of your project.

Bed quilt--squares unfinished size 4 1/2 inches. To make triangles from squares for this, cut the squares 4 7/8 inches. Or cut a bit larger and trim to square at 4 1/2.

For the lap quilt size--squares unfinished size is 3 1/2 inches. Cut triangles from 3 7/8 inch squares.

For a baby quilt--squares unfinished size is 2 1/2 inches. Cut triangles from 2 7/8 inch squares.

Your next clue is scheduled for 8:01 p.m.

Pumpkin and Fetta Tarts


Ingredients
a.. 500g pumpkin, skinned, seeded and cut into 2cm cubes
b.. 1/4 teaspoon minced garlic [optional]
c.. olive oil
d.. salt and freshly ground black pepper
e.. 1 tab thyme leaves
f.. 1 puff pastry sheet cut into 4
g.. 125g fetta cheese, cut into small cubes
h.. 12 cherry tomatoes, cut into half
i.. 1/2 cup kalamata olives seeded and sliced
j.. 1 egg
k.. 1/2 cup cream
Method
Place the pumpkin cubes, oil, 1/4 teaspoon minced garlic into a dish. Microwave until tender
Place squares of puff pastry inot jumbo sized muffin pan or other pie tins. Divide the pumpkin cubes between them, along with the fetta, tomatoes, olives.
Combine the egg and milk/cream, season with salt and pepper to taste and divide between the tarts.
Bake in a 225 degrees celcius oven until pastry is brown and filling is set.
a.. The Australian frozen puff pastry sheets are 9.1/2 inches square
b.. 225 celcius is about 437 farenheight
c.. I sometimes use sweet potato instead of pumpkin
d.. often don't have thyme and have substituted fresh basil instead
e.. best thing about this is it's quick and easy and delicious hot or cold and freezes really well... quess what I have cooked for over the busy sewing weekend??

Mystery Quilt Fabric

Three sizes. Borders not included.

Various fabrics in three colors,  or dark/medium/light values in mixed scraps.

Bed sized—60 x 72 without borders
Color 1 or Dark scraps—1 ¾ yards total
Color 2 or Medium scraps—1 ¾ yards total
Color 3 or light scraps—2 yards total

Lap Quilt—45 x 54 without borders
Color 1 or Dark scraps—1 1/8 yards total
Color 2 or medium scraps—1 1/8 yards total
Color 3 or light scraps—1 ¼ yards total

Baby quilt—30 x 36 without borders
Color 1 or Dark scraps—5/8 yards total
Color 2 or medium scraps—5/8 yards total
Color 3 or light scraps—3/4 yards total

NewYear 2010 Cyber-Sew-In Lotto Block


The Lotto Block for the Cyber Sew-In is the Square in a Square.
Blocks will be eight inches finished and scrappy.
Blocks can be made starting with either dark or light in the center.

Cutting:
1. The center square is cut 3 3/8 inches.
2. The first round of half square triangles are cut from 2 7/8 inch squares.
3. The second round of triangles are quarter square triangles cut from a 5 1/4 inch square.
4. The final half square triangles are cut from 4 7/8 inch squares.


Cutting triangles from a slightly larger square allows you to easily square up after stitching.

Stitching:



Continue in the same way for two more rounds of triangles. The next round should be squared up at 5 5/8 inches. the final Block will be 8 1/2 inches.


Each block will mean one chance to win all that are made. Report the number of lotto blocks that you make on Sunday evening for the drawing.
